Quick Fix Pasta
Feel like whipping up a quick dish of pasta for dinner that tastes great and is kind to your waist? Then, check out this Scampi dish that can be made with either Shrimp or Chicken. It’s packed with flavor, takes less than 20 minutes to prepare from start to finish, and has roughly 300 calories. It’s even good enough to share with company.
Shrimp or Chicken Scampi -Makes 4 Servings (308 calories or 5 pts each)
Ingredients:
- 4 cups wheat pasta cooked (like Dreamfields)
- 8 oz cooked shrimp (or replace with cooked chicken)
- 2 tsp olive oil
- 2 cloves garlic, finely chopped
- 3/4 c white wine
- 2 tomatoes, seeded and rough chopped
- 1 tbsp parmesan cheese (optional)
- fresh chopped parsley for garnish (optional)
- Salt and pepper to taste
- Boil pasta and set aside in bowl
- In saucepan, sauté garlic in olive oil on medium heat until tender.
- Add shrimp to pan, sauté for 2-3 min until heated; stirring often.
- Add tomatoes & sauté for 2-3 more mins. Salt & pepper to taste.
- Pour wine into pan and bring to slow simmer. Cook for 3-4 mins.
- Empty pasta into saucepan with sauce and mix together
- Top with parmesan cheese and parsley for garnish and serve
