Quick & Tasty Beer Chili Recipe

Beer Chili – Serves 6 (Approx 300 Calories / 5 pts per serving)
Prep Time: 10 minutes Cook Time: Minimum 20 minutes
Ingredients:
- 1 Tbsp Olive Oil
- 1 green pepper, finely chopped
- 1 onion, finely chopped
- 1 cup sweet corn
- 1.25 oz packet of McCormick Chili Seasoning Mix
- 1/2 small can of tomato paste
- 1 pound 96% lean ground beef or ground breast of turkey
- 15.5 oz can of pink, kidney or pinto beans
- 12 oz bottle of light beer
- 14.5 oz can of diced tomatoes
- Salt, Pepper to taste
- Optional: scallion finely chopped
- Optional: light sour cream
- Optional: light shredded mexican/cheddar cheese
Cooking Instructions:
- In large pan, heat olive oil over medium heat
- Add green pepper, onion to pan. Sauté until tender – 3 to 4 minutes
- Add ground meat to pan, salt & pepper. Brown meat until cooked
- Pour in both chili seasoning mix and tomato paste and stir
- Add diced tomatoes, light beer & bring to a boil.
- Lower heat to low-medium & bring to a simmer – stir occasionally
- Add beans and sweet corn and continue stirring, cooking for 10 minutes
- Chili is now ready – continue cooking to thicken to desired consistency
- Season with salt & pepper and serve in bowls
- Top with scallions, 1 Tbsp sour cream and 1/8 c of light shredded cheese
