Rosemary Steak & Tomato Relish

This recipe requires less than 30 minutes to prepare and is packed with big, bold flavor. The sweet and sour combination of the tomatoes and balsamic reduction on top of your grilled steak is absolutely heavenly.

What You’ll Need:
- Four 4oz steaks, lean
- 1 cup tomatoes, finely chopped
- 1/3 red onion, finely chopped
- 1/2 Tbsp garlic, minced
- 1 Tsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Vinegar
- 2 Tbsp Water
- Kosher Salt
- Ground Pepper
- Fresh sprig of Rosemary
Making the Dish:
- Preheat your grill to medium high
- Heat a small saute pan to medium heat and add olive oil
- Add chopped onion and saute for 1-2 minutes
- Add minced garlic and saute for extra minute
- Pour in tomatoes, water, vinegar and salt and bring to boil.
- Lower heat to low-medium and simmer for 10-13 minutes until liquid is absorbed into tomatoes
- Add ground pepper, cover, set aside and keep warm.
- Rub steaks with rosemary, salt and pepper and place on to hot grill
- Cook steaks to medium temperature, with nice char on outside. Should take 10 minutes or less
- Remove from heat and allow to rest for 5 minutes
- Serve 4oz steak with 2 Tbsp of Tomato Relish on top
