Braised Chicken & Olives - 350 cal

 

I’m constantly watching for new recipes where green olives are the star ingredient.  There’s something about the sweet & sour taste of them that can completely transform the most basic of dishes into a meal to remember.  You have no shortage of these recipes in Latin cuisine, but may need to look a bit harder outside of this cooking style.        

       

        

Braised Garlic Chicken with Olives is a recent recipe find that was definitely worth the wait.  The olive, garlic and wine flavors infuse into the chicken to create a comforting, finished entree to satisfy your palate.  But, you be the judge. 

The ingredients:    

  • 1 whole chicken; cut into pieces
  • 4 cloves of garlic; peeled and smashed    
  • 2 tsp olive oil    
  • 1 package button mushrooms; halved    
  • ½ cup white wine    
  • 1 cup chicken broth    
  • 2 oz green olives
  • Kosher Salt and Pepper to taste

          

Cooking the dish:       

  • Preheat oven to 350 degrees
  • Heat skillet on stove top to medium-high heat and add 1 tsp of olive oil
  • Thoroughly season chicken  pieces with salt & pepper and place in pan skin down
  • Cook chicken 4-5 minutes on each side and then remove from pan and keep warm
  • Add remaining oil to pan and saute the garlic for 1-2 minutes.
  • Add mushrooms and green olives and continue cooking for 2-3 minutes
  • Pour in white wine, bring to a boil and then simmer for 1-2 minutes
  • Pour in chicken stock, bring to temperature, and then add chicken
  • Stir, season with salt and pepper to taste and place in oven
  • Bake for 10-15 minutes until chicken is thoroughly cooked

     

Once the chicken comes out of the oven, it’s ready to serve with your favorite sides.  And, you should know that the white wine sauce makes a good gravy that you can pour over your veggies, potato or rice.  Mangia and enjoy.
