Prep ‘Em & Forget ‘Em Beef Short Ribs
I love recipes where you only need to invest 10 or so minutes of prep to end up with a hearty, healthy, comforting meal. This is one of those low maintenance dishes that has a delicious, stick to your bones quality.
Braised Beef Short Ribs takes merely minutes to prepare and requires no more than a handful of ingredients to give you a finished product that looks and tastes like you’ve toiled over it for hours. This is perfect for a rainy or cold night or when you’re looking for something a little different for dinner.
The Ingredients:
- 1 pound beef short ribs; lean
- 1 onion finely chopped
- 2 cloves of garlic, finely chopped
- 2/3 cup red wine
- 1 tsp olive oil
- 2 large plum tomatoes; seeded and diced
- kosher salt and pepper to taste
Making Your Dish:
- Heat skillet to medium-high heat
- Generously season ribs with salt & pepper. Sear on each side for 3 min
- Remove ribs from pan and place at bottom of slow cooker
- Add 1 tsp of olive oil to skillet and bring to temperature
- Toss in onions and garlic and saute until tender 2-3 minutes
- Place red wine & tomatoes in pan. Bring to boil (approx 2-3 min)
- Pour tomato mixture into slow cooker over beef ribs
- Cook on low setting for 5-6 hours

Round out this dish by serving it on top of a pile of mashed potatoes and with a green veggie side. Mangia and enjoy.
