Lemon Parsley Pork – 233 Calories

The Ingredients:
- 4 – 4oz pork chops, lean
- 2 tsp extra virgin olive oil
- 1 lemon
- outer skin completely zested
- remaining skin removed, thinly sliced & diced
- lemon flesh cut into thin slices for garnish
- 3 Tbsp fresh parsley, finely chopped
- 1 garlic clove, minced
- Kosher salt and pepper to taste
Making Your Dish:
- Preheat pan to medium-high heat
- Season pork chops well with salt and pepper
- Add chops to pan and sear 2-3 min per side
- Pour 1/2 cup water or chicken stock in pan with pork
- Bring to boil, reduce heat to med, then cover & simmer for 7-8 min
- While pork is cooking, mix following in bowl and set aside:
- lemon, minced
- garlic
- parsley
- salt & pepper
- When pork is ready, top with 1 Tbsp each pan juice & parsley mixture
- Top chop with lemon slice for garnish and serve
Bring out the flavors in this dish by serving the pork with a side of mildly seasoned mashed potatoes and a steamed vegetable like broccoli. The broccoli really gets a boost when topped with the lemon parsley mixture. Mangia and enjoy.
