Lemon Parsley Pork is a recipe that has such bright flavor to it that it’ll leave you feeling like it’s a perfect dish to usher in the spring.  Plus, the prep and cooking instructions are so quick and straightforward that anyone in your house can take a stab at making it – in fact my husband whipped it up for us.

  • Serving size – 4 oz chop

The Ingredients:          

  • 4 – 4oz pork chops, lean
  • 2 tsp extra virgin olive oil
  • 1 lemon
    • outer skin completely zested
    • remaining skin removed, thinly sliced & diced
    • lemon flesh cut into thin slices for garnish
  • 3 Tbsp fresh parsley, finely chopped
  • 1 garlic clove, minced
  • Kosher salt and pepper to taste

                 

Making Your Dish:           

  • Preheat pan to medium-high heat
  • Season  pork chops well with salt and pepper
  • Add chops to pan and sear 2-3 min per side
  • Pour 1/2 cup water or chicken stock in pan with pork
  • Bring to boil, reduce heat to med, then cover & simmer for 7-8 min
  • While pork is cooking, mix following in bowl and set aside:
    • lemon, minced
    • garlic
    • parsley
    • salt & pepper
  • When pork is ready, top with 1 Tbsp each pan juice & parsley mixture
  • Top chop with lemon slice for garnish and serve

        

Bring out the flavors in this dish by serving the pork with a side of mildly seasoned mashed potatoes and a steamed vegetable like broccoli.  The broccoli really gets a boost when topped with the lemon parsley mixture.  Mangia and enjoy.
