Recipe: Insalata Caprese ~180 cal (3 pts)
With summer nearing, it’s a good time to take advantage of fresh, local produce that’s available to you. One of my favorites happens to be vine-ripened tomatoes. I can eat them as is with just a bit of kosher salt or I enjoy throwing them into quick salads, pasta dishes, and appetizers like bruschetta.
Insalata Caprese is a simple recipe I use when wanting an easy nibble or meal opener before the main course. All you need is a handful of ingredients to deliver a ton of flavor.

What You’ll Need:
- 2 large tomatoes, cut into 1/4 inch thick slices
- 2 medium size fresh mozzarella balls, cut into 1/4 inch thick slices
- 2 tsp extra virgin olive oil
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp red crushed pepper
- 2-3 leaves fresh basil, torn into pieces for garnish
Making the Salad:
- On serving plate, place tomato and mozzarella – alternating slices
- Season with salt, pepper, red crushed pepper
- Drizzle with olive oil
- Top with fresh basil
- Serve
This recipe pairs well with almost any protein and is a nice add to your BBQ fare. Mangia and enjoy.
