Recipe: Light & Lean Taco Salad – Approx 180 Cal (3 pts)
The original version of this Light & Lean Taco Salad recipe is a sought after treat at family and friend gatherings. I, like some of my other relatives, learned how to make this from my Aunt and have showcased it ever since at BBQs.
The new and improved version that’s being shared today is lighter and leaner while still holding on to all the taste. This is one of those dishes that guests will ask you for the recipe. I’ve never been a fan of French dressing but I must say it completely transforms this salad into a tangy Mexican delight. Think about including it at one of your next events.

The Ingredients:
- 1 lb extra lean ground beef or turkey
- 1 chili seasoning packet
- 1 large red onion chopped finely
- 1 large can sliced black olives
- 1 basket of grape tomatoes
- ½ head of iceberg lettuce, shredded
- ½ large bag of baked Doritos broken into pieces
- ½ small bottle of Ken’s Light Country French Dressing
- ½ c 2% shredded Mexican Cheese
Preparing the Dish:
- Cook ground beef / turkey in skillet.
- Add chili seasoning packet and mix thoroughly. Place in large serving bowl.
- To serving bowl, add red onion, black olives, and grape tomatoes. Mix well.
- Add shredded lettuce, shredded cheese and dressing. Mix well.
- Finally, add in crushed Doritos, mix and serve.
- More French dressing can be added to salad to keep it from being dry.
This salad works with pretty much anything your grilling. Note – it’s good that it typically runs out by the end of your event because the lettuce and ingredients don’t refrigerate well (they wilt). Mangia and enjoy.
