Peanut Chicken & Noodle - 278 Cal (5 pts)

 

Preparing an Asian-inspired dish often leaves me feeling a bit intimidated because of my lack of experience and due to being outside of my cooking profile comfort zone (basically it’s not Italian).   When having an opportunity to take  a small step into this style, I tend to give it a shot.       

One of the recent occasions to explore Thai cuisine was through this short-cut recipe for Peanut Chicken & Noodles.  You get all the enjoyment of Thai food while going through significantly fewer steps than normal.  Though simple, this dish was a hit in our house – because it was different and because it’s packed with tangy, peanut flavor.          

        

Nutritional Information per Serving:     

  • Servings – 6
  • Calories – 278
  • Total Fat – 3 g
  • Fiber – 6 g
  • Protein – 21.5
  • WW – 6 pts

          

What You’ll Need:       

  • 15 oz fully cooked chicken breast cuts (like Harvestland)
  • 1 box whole wheat spaghetti or asian noodles
  • 4-5 scallions, thinly sliced
  • 4-5 Tbsp Thai Peanut Sauce (like San-J)
  • Cooking Spray

        

Making the Dish:        

  1. Prepare pasta according to package & set aside
  2. While water is boiling, bring deep pan to medium-high heat
  3.  Spray pan with cooking spray
  4. Add chicken and heat through center
  5. Place scallions and pan and saute
  6. Mix in Pasta and blend thoroughly
  7. Pour in Thai Peanut Sauce & combine all ingredients
  8. Heat for 1-2 minutes and serve
  9. Top with scallions for garnish

         

Dish can either be served warm or as a cold pasta/chicken salad.  Mangia and enjoy.
