Grilled Cheese w/a Twist (~300 cal)

Cheddar Avocado Panino - Approx 300 Calories

 

While growing up, many of us acquired a taste for the classic, grilled cheese sandwich that our Moms used to make us either after school or on the weekends.  From time to time, it’s probably safe to bet that this family favorite makes an encore appearance in our households.   

Here’s a variation on the original recipe that’s close enough to its predecessor to please the kids while different enough to cover us adults as well.    

    

What You’ll Need:  

  • 2 slices sourdough bread
  • slice low-fat, cheddar cheese (like Sargento)
  • 1/4 avocado, sliced
  • sliced red onions (optional)
  • olive oil, cooking spray (like Pam)

    

Making Your Panino: 

  1. Preheat your Panini press or skillet to medium-high heat
  2. Place ingredients on top of 1 bread slice & top with 2nd slice
  3. Press down to flatten the sandwich
  4. Spray press or pan with cooking spray
  5. Place sandwich in press/pan  (If a pan, press down on sandwich to increase heat delivery)
  6. Cook for 4-6 minutes total in a press and 4-6 min per side in a pan
  7. Remove from heat and serve

    

This sandwich, like a grilled cheese, goes well with pretty much any soup of your choice or with a side salad with dressing.  Mangia and enjoy.

    Nice one, Di. I think this sammie could even go vegan, as the avacado provides that slippery meltiness we love in a grilled cheese. yyerrmmm
