Recipe: Coconut Curry Beef – 300 Calories
If you’re looking to cook up an Indian-like dish that isn’t too complex while still having all the flavors you enjoy, give Coconut Beef Curry a taste. You’ll need about 15 minutes to prep the ingredients and then another half hour of cooking time to wrap it up.
The creamy curry sauce sweetened by a touch of coconut milk nicely balances the tartness of the fresh pineapple while bringing out the flavor of the beef. Scoop a good-sized portion over white jasmine rice and you have yourself a fabulous asian creation that’ll hit the spot.

The Ingredients:
- 1 lb lean flank steak; cut into thin short strips
- onion chopped
- 2 cups pineapple, cubed
- large apple, chopped
- 2 tsp extra virgin olive oil
- 1 Tbsp fresh ginger, grated
- 1 Tbsp garlic, minced
- 2 tsp curry powder
- 1 tsp ground cumin
- 3/4 c light coconut milk
- 2 Tbsp soy sauce
- 1 tsp sugar
- salt to taste
Making the Meal:
- Heat half of oil in pan over medium-high heat
- Season beef with salt and place in pan. Cook 1 minute per side
- Remove from pan and set aside
- After draining pan, add remaining oil and heat to temperature
- Place onion, garlic and ginger in skillet; saute for about a minute
- Pour in pineapple and brown for 2-3 minutes
- Include apple and continue cooking for several minutes until softened
- Sprinkle in the cumin and curry; stir thoroughly for a minute
- Pour in the milk, soy sauce, and sugar; simmer over low heat for a couple of minutes
- Now, add the beef to the pan until warmed
- Serve one cup over your favorite jasmine or white rice
