Recipe: Potato Veggie Quiche

Last week, I was in the mood for a warm, casserole-like dish that brings several ingredients together; resulting in a blend of flavors.  Sometimes, I get a little tired of the classic meat, veggie, carb combo that can set in over the summer when I’m relying heavily on my grill for dinners.   

To satisfy the craving, I decided to make a Potato Veggie Quiche which was adapted from a recipe I saw on Cook Yourself Thin.  This Quiche recipe can adjusted to your tastes or as-is can be an ideal vegetarian or lighter calorie dish for you and your family.  Plus, it reheats extremely well and makes for an AMAZING breakfast.    

   

The Ingredients:

Half bag of Garlic Oreida Steam n Mash Potatoes (prepared as indicated), 1 tsp olive oil and Pam Olive Oil Cooking Spray, 1 red onion (rough chopped), 1 cup mushrooms (rough chopped), 2 cups spinach, 1 cup tomatoes (rough chopped), 1 egg, 1/2 c egg whites, 2/3 c skim milk, 1 slice light cheddar cheese (like Sargento slices), and salt & pepper to taste        

 
Making Your Dish:

-Preheat the oven to 400 degrees   

-In a pie dish, spread out the mashed potatoes to form a thin crust around the pan    

   

Mashed Potato Crust

 

-Place in preheated oven & bake until crispy (about 15-20 min)    

 -Remove from oven & allow to cool (approx 5-10 min)    

-Preheat oven to 350 degrees   

-In a skillet coated with Pam, begin to saute onions &  mushrooms   

-Add salt and pepper to taste and cook until they begin to soften   -Place tsp olive oil in pan & pour in tomatoes    

 -Stir until liquid is released and begins to evaporate   

 -Toss in spinach and cook 1-2 minutes until wilted   

 -Remove veggie mixture from heat and set aside to cool   

 -In a bowl, mix egg, egg whites, & salt/pepper to taste     

 -Assemble your Quiche      

 -Place veggie mixture on top of potato crust     

 -Spread evenly throughout pie pan     

 -Pour egg mixture evenly over veggies     

 -Break slice of cheddar & spread across top   

 -Bake until toppings become firm with a little wobble (20-30 min)   

 -Remove from oven and allow to cool   

 -Cut into 8 pieces and serve   

Quiche Slice - Approx 150 cal (2.5 pts)

 

After baking, the mashed potatoes and cheese melt to deliver a creamy decadence that’s sure to please the family or any crowd.   Mangia and enjoy.
