Perfect for fall: Beer-braised Turkey Recipe
Because of the time of year, many of us have Fall on the brain. It’s been a pretty common theme in our blog posts and in the cooking that’s been happening in our kitchens. Following suit, my mind has been wandering beyond fall and has made its way to Thanksgiving – the turkey, the lovely sides, the hearty meal… nom..nom..nom.
There’s no good reason why I can’t break out the turkey before Thanksgiving, so that’s exactly what I did when I made Beer-Braised Turkey the other day.
It’s simple, quick to prep, has about 300 calories per serving…and most importantly it took care of my Turkey FIX .
The Ingredients:
- 2 each Turkey Legs & Thighs (or you can sub in breast meat)
- 1 bottle light beer
- 1 cup sweet onion, rough chopped
- 1 cup celery, rough chopped
- Kosher salt & pepper to taste
- 1 tsp extra virgin olive oil & cooking spray
- White or Brown rice (optional)
Making the Turkey:
- Heat cooking spray at med high heat in a pan
- Place Turkey pieces skin down in pan & sear (4-5 min per side)
- Remove from heat and set aside
- Pour tsp olive oil in pan and spray with cooking spray
- Add onions and celery, cook until soft (4-5 min)
- Salt & pepper to taste
- Pour in beer and bring to a rolling bowl
- Reduce heat to medium & simmer for 2-3 minutes
- You can either return turkey to pan & cover continuing to heat until to temp OR
- You can place turkey in crock pot, cover with veggies and broth
- Continue cooking in crock pot on low for about 6 hours until tender
- Place 4 oz Turkey meat with 1/2 cup vegetable mixture on rice & serve
The deep flavors of the turkey and beer that develop during cooking are absolutely wonderful. All you need is to pair this entree up with a dark green vegetable (like green beans) and you’re good to go.

My family never uses the crock pot. We have one but it pretty much just collects dust down in the back of one of our cupboards. I think I used it about one.. and I have no idea why I haven’t used it since then because the recipe I made turned out fantastic and it was SO convenient. I guess I just like to make things complicated.
I was the same way. Used to have a crockpot tucked away in my cabinets and it never got used. When I bought my smart crock that I can use with the built-in timer, I put it in a spot that’s more accessible and where I can see it daily. Since then, I’ve used it more. It gets more action based on season – highest in the fall and winter.
