Peanut Butter Banana Bread Goodness

Oh yeah. You heard correctly.

Peanut Butter Banana Bread with a Peanut Butter Glaze is happening today. Two of my favorite flavors brought together into a loaf of bread goodness.

While on a recent shopping trip to Trader Joe’s, I picked up a package of Baker Joe’s Peanut Flour……

 

….. and have been waiting for just the right opportunity to make something fabulous with it. I’ve heard several people proclaiming much love for this product so I wanted to make sure that my first dish was worthy of it. I’m pretty sure I succeeded.

Now, would you believe that this bread is approx 120 calories (2 pts) per serving? – Believe it.

(There are 16 servings in a loaf)

 

To make it, here’s what you’ll need:

  • 2 bananas, mashed
  • 1/3 c low fat greek yogurt
  • 4 T PB2 (or some other peanut butter)
  • 3 T light butter (I used Land O Lakes Light)
  • ½ c egg whites
  • ½ c white sugar
  • ¼ brown sugar splenda blend (or ½ cup of regular brown sugar)
  • 1 c all purpose flour
  • ½ c peanut flour
  • ¼ ground flax
  • ¾ tsp baking soda
  • ½ t salt
  • ½ tsp each – cinnamon, allspice
  • Cooking spray

 

For Peanut Butter Glaze:

  • ¼ c powdered sugar
  • 1 Tbsp Low Fat Milk (any variety)
  • 1 Tbsp PB2 (or peanut butter)

 

Now for the prepping and baking:

  • Preheat your oven to 350 degrees
  • Mix together the first 5 ingredients in bowl.
  • Add in both sugars and blend well (by hand or mixer)
  • Combine flours, flax, b soda, salt & spices in another bowl.
  • Mix and then combine with banana mixture
  • Pour batter into 9×5 pan coated with cooking spray
  • Bake for 45-50 minutes (or until knife into loaf comes out clean)
  • Allow to cool for 10 minutes before glazing
  • For glaze, combine three above ingredients
  • Drizzle over bread sealing the top. Allow to sit another 5- 10 min
  • Cut , serve and eat

 

 

Voila. You now have your very own loaf of Peanut Butter Banana Bread – and you’re not going to regret it. It’s like having a peanut butter and banana sandwich but a little sweeter and in bread form. Sooo good. Hope you enjoy.

    this looks FABULOUS !! I especially love the glaze…

    I use peanut flour to give some OOMPH to my spinach smoothies… extra protein for staying power!

    I have some peanut flour in my cabinets just waiting to be used! I’ve messed around with it to make some bread, but I didn’t add bananas! That sounds amazing! (Such a good combo!)

      I couldn’t agree with you more about the PB & Banana combo. They were just made to be together.
      And now that I’ve discovered flax – I love to use it whenever I can.
