Nothing Thin ‘N Trim About The Taste of this Chicken Skillet

Chicken Potato Skillet w/Olives ~300 cal (5 pts) per cup

Earlier this year, I came across Thin ‘n Trim Chicken Sausages and soon discovered I really liked them. To see how much, feel free to check out the review.

Suffice it to say that because of their convenience (they’re precooked), I keep packs of them on hand for when I want to pull together a quick meal.

My recent creation is no exception – it’s simple to make, has a ton of flavor, and in keeping with tradition is also low cal / low fat. To make Chicken Potato Skillet w/Olives, you’ll need:

  • Pack chicken sausages – precooked – sliced into ½ in pieces (any savory flavor will do)
  • 1 clove of garlic, minced
  • 2 tsp extra virgin olive oil
  • 3 large potatoes diced or 2 cups baby potatoes –halved
  • Dozen Kalamata olives, pitted & sliced

 

Serving Size: Approximately 1 Cup / 300 Calories or 5 pts

Preparing the dish is as simple as:

  1. Heat 1 tsp oil with garlic over medium high heat
  2. Add in chicken sausage and brown for 5 minutes
  3. Include remaining tsp of olive oil
  4. Pour in potatoes & olives, continue browning 5-10 minutes
  5. Dish is ready when all ingredients are tender but also nicely browned
  6. Remove from heat and serve

 

When ready, the dish looks a little something like this:

 

What’s great about this recipe is that you get a mix of soft and crunchy textures mixed in with a well- seasoned blend of garlic, olive and chicken flavors. It really is outstanding.

And, because of the mediterranean profile of this dish, it goes great paired up with a large side salad topped with Italian or Vinaigrette and a touch of Feta Cheese. Soo good.

    Sausage and potatoes are such an awesome combo! I think my favorite pre-packaged item is Morningstar veggie burgers. Great in a pinch, I always have them in the freezer.

      I agree – Sausage and Potatoes were meant to go together. Throw in the olives and it’s even better. BIG FAN of morningstar veggie burgers and breakfast sausage. Great products indeed.

    Although I don’t eat meat anymore, I have to admit that your meal DOES look pretty good. It looks so comforting and fall-ish!

    Oooh that looks good. :) I’m so glad you liked the acorn squash recipe! I haven’t made it since then but The Lover might want me to revisit that one!
