Thanks to the Squash S.O.S Response Team

You may or may not know that I recently put out a Squash S.O.S.

What else is one to do when they have too many butternut, acorn & sugar pumpkins on hand – but enlist the help of friends. And, help I did receive.

In fact, more than a half dozen ideas were shared on how I might cook up my squash beauties. I didn’t waste any time testing a couple of them out immediately.

First up, Liz suggested making fries out of the butternut – and so I did. Chipotle Spiced-Rubbed Butternut Fries.

But, I couldn’t eat just fries alone, right? (Ok maybe I could but I chose not too J) I decided to whip up a cuban panini as the side.

Thick slices of sourdough + roasted pork, swiss & pickles. The end results look like this….

One scrumptious, crunchy cubano with some kickin’ chipotle butternut fries. (~ 300 cal – 6 pts per cuban, ~90 cal – 2 pts for fries). YUMMY!

Next, I really wanted to go with an acorn squash recipe. For this one, I knew I would be going it solo as the hubby’s not really a fan. Retta came to the rescue with her Sausage & Couscous Stuffed Acorn Squash. Deli-ci-ious!

I made a few minor modifications to this dish:

  • Used chicken sausage (thin n’ trim)
  • Added in carrot
  • Sautéed veggies in 1 tsp olive oil & seasoned them with salt & pepper
  • Used tri-color couscous
  • Put a touch of parmesan cheese on the top to finish them off

At the end, I got this approximately 250 calorie (5 pt) meal of squash goodness:

It was crunchy. Kinda sweet. Veggies were perfectly seasoned. And the meal was pleasantly filling. Loved it – in fact so much that I ate two meals of it back to back.

So a big shout out to my blog friends for helping a lady out. These dishes were great. And, I’m sure you’ll get to see how I choose to whip up the rest of my squash pack. Honorable mentions on the list are:

  • Butternut Squash and Apple Soup (with Leeks and without)
  • Lentils & Butternut Squash
  • Squash, Spinach & Chicken Pasta
  • And…Pancakes!!

    If you ever can’t get rid of your squash, feel free to send it to me ;) haha I love squash!!! At least it’s so versatile that you probably won’t get sick of it! :)

      You got it. You’re now on my ship to list in the event of a squash emergency. LOL
      Butternut is pretty versatile – made a great pasta dish with it today.

    Butternut fries! That is a great idea. I brought a butternut squash today to make in a vegetable currie later on tonight. Those fries look like a great suggestion for any left over squash :)

    The acorn squash looks so good. I just bought an acorn squash at the store and was just going to roast it like last time, but that picture kind of left me drooling :) I’m going to have to try that. Your sandwich looks great as well!

    Your squash creations look delicious!! I love stuffing squash the most, I think. I made a cornbread stuffed acorn squash that was to die for, and yours looks just as delicious. Your fries look awesome, too – making me want a crinkle cutter!!

      Cornbread stuffed squash sounds awesome. May have to give that a shot. Love the crinkle cutter. Makes the hubby nervous when I use it but the veggies look great. :)
