Easy Crockpot Pork Chops

When things get kinda of busy, it’s nice to be able to fall back on a quick recipe or two for dinner. Making use of the crockpot is definitely a way to pull something together with not too much effort while still whipping up a meal that the hubby and I can enjoy.

In fact, yesterday’s recipe Easy Crockpot Pork Chops fit the bill perfectly.

It was Simple. Hearty. And Good For Us. What’s not to like?

 

The Ingredients:

  • 4 bone-in or boneless pork chops (lean)
  • Garlic Salt to Taste
  • Salt / Pepper to Taste
  • 2-3 cups chicken broth
  • 1 cup mushrooms, sliced (canned or fresh)
  • 1 Tbsp cornstarch
  • Cooking spray

 

Making Your Dish:

  • Preheat skillet to medium high heat and coat with cooking spray
  • Season pork chops generously with garlic sat
  • Sear pork in skillet for 1-2 min per side (browning them, without fully cooking them)
  • Place in the bottom of your crockpot
  • Add mushrooms, broth, & salt/pepper into crockpot along with pork.
  • Set crockpot to low and cook 4-5 hours
  • Once ready, strain broth into small saucepan (keep other items in crock on warm)
  • Bring stock to slow boil & add in cornstarch mixed with ¼ c water to form gravy
  • Continue stirring until thickened
  • When done, serve pork chop with mushrooms & gravy on top

 

 The end result is an easy, comforting meal that will hit the spot on a cold winter’s night. Plus, it’s a quick option to prep on a day where you’re heading out to work but want dinner ready for you when you get home.

Throw in a side of peas, mashed potatoes and a salad..and you have a nicely balanced meal. Mmm enjoy.

    Just last night, I had the Salsa Chicken Julie blogged about at PB Fingers. Two ingredients: Salsa & Chicken. Cooked in the crock pot all day. Super easy, but totally delicious!

    This looks yum, I haven’t tried chops in the crockpot yet! I have done pulled pork and bbq chicken in mine!

    I always say this, but I really need to use my crock pot more. I love cooking in the crock pot, but don’t do it that often.
